Udder Confusion

  Soy milk, coconut milk, almond milk, rice milk, hemp milk... Which are best for you? Can they be interchanged in recipes that call for regular milk? Should you skip cow’s milk altogether?

Unfortunately, the answers are not that simple, except to say that non-cow milks cannot be substituted in recipes without consulting the manufacturer. They will change taste in some dishes, and in a lot of them, they won’t allow baked goods to cook evenly
