Summer and Salts by the Seashore


Table salt is mined and more heavily processed than some other salts, especially sea salt.

Sea salt is the result of evaporation of ocean or lake water, which is minimally processed, leaving minerals and nutrients behind.

But its greatest advantage is that it tastes deeper and richer than most salts.

You can buy sea salt in many forms. But how about making one of your own? We did in our Teflon™ brand test kitchen, using dried porcini mushrooms: Whirl together ½ cup chopped dried porcini mushrooms with ¼ cup sea salt until finely ground. This is great over pasta or chicken, or for rubbing onto grill meats.
