Put a Spring Veggie in Your Step
Artichokes, celeriac, and Vidalia onions are only a handful of vegetables that start springing up this time of year. |
One of our favorites, though, is not so visible… and that’s watercress. Watercress is loaded with beta carotene, magnesium and calcium. It’s a natural antihistamine and contains quercetin, a flavanoid that reduces inflammation.
Look at these greens we found at a local farm field, plucked roots and all keep the veggie fresher longer while in the fridge.
