Put a Spring Veggie in Your Step

  Artichokes, celeriac, and Vidalia onions are only a handful of vegetables that start springing up this time of year.

One of our favorites, though, is not so visible… and that’s watercress. Watercress is loaded with beta carotene, magnesium and calcium. It’s a natural antihistamine and contains quercetin, a flavanoid that reduces inflammation.

Look at these greens we found at a local farm field, plucked roots and all keep the veggie fresher longer while in the fridge.

Add watercress to salad or a soup, and its peppery essence will add a spring to your step – maybe even a hop, skip, and a jump!
