Warm Egg Dressing

Servings: 2 cups

Mostly refreshing with a twinge of sweetness, this salsa-style dressing complements eggs over easy or a cheesy omelet. Make it a day ahead of time and cook the eggs the next morning.



1/4 cup sweetened coconut flakes
3/4 cup chopped cucumbers (skin on)
1/2 cup chopped plum tomatoes
1 cup chopped mango
Sprinkling of red pepper flakes
1 tablespoon chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon orange juice
Salt and pepper



In a small skillet coated with Teflon™ non-stick coating, sauté the coconut over medium-low heat, just enough to brown it lightly. Combine all of the remaining ingredients, seasoning with the salt and pepper to taste.
