Oven-Broiled Shrimp Salad with Mustard Lemon Sauce and Orzo

Servings: 6

Tangy and rich with honey glazing from the heat of the upper flame, serve this with chilled orzo. The combination is unexpected and delightful.



¾ pound orzo pasta

½ cup vinaigrette dressing of choice

½ cup (1 stick) butter

2 tablespoons honey mustard

3 tablespoons fresh lemon juice

1 large bunch fresh dill, finely chopped

1 pound large shrimp, peeled, deveined with tails on

Cook the orzo according to package directions and mix with the dressing; refrigerate.

In a large mixing bowl, mix together the butter, mustard, lemon juice and half the dill. Add the shrimp, coating by tossing. Add the shrimp to a roasting pan or baking pan with Teflon™ non stick coating, placing them in a single layer. Preheat the broiler and broil the shrimp 3 to 4 minutes to brown and turn over for 1 to 2 minutes. Serve over the chilled orzo salad and sprinkle with remaining dill.
