Strawberry Spinach Salad

The unusal pairing, combined with the soft sweetness of the vinaigrette, makes this salad a favorite. Plus this salad has lots of vitamin C, folic acid, and iron.



1 cup fresh sliced strawberries
Bunch of spinach, washed thoroughly
Balsamic vinegar

Basic Balsamic Vinaigrette: 
1/3 cup olive oil
1/3 cup balsamic vinegar (from the strawberries)
1/4 tsp crushed garlic
2 tsp seedless raspberry preserves
Salt and pepper to taste


In a bowl place strawberries and balsamic vinegar, allow to marinate for approximately 30 minutes.

Wash spinach thoroughly. Drain the vinegar from the strawberries to use for making your vinaigrette.

Combine strawberries and spinach. Toss with vinaigrette and serve.
