Veggie Zoodle Bowl

Get the Stir Fry!

If you don’t have a spiralizer, buy zukes, carrots, beets freshly pre-curled. Add pork, chicken, or shrimp for a full meal.




2 tablespoons toasted sesame oil
1 cup chopped green onion
3 medium cloves garlic, minced
2 tablespoons b&w sesame seeds
2 tablespoons or to taste teriyaki sauce
1 tablespoon sriracha, optional
2 medium zucchini spiraled
2 summer squash, spiraled
2 medium peeled beets, spiraled
¼ cup peanut butter
2 tablespoons honey
Cilantro & crushed peanuts

Heat oil on medium in a stir-fry pan (wok or sloped-sided skillet) with Teflon™ nonstick coating. Add onion; cook limp; saute garlic 2 minutes until fragrant; add sesame seeds toasting 1 minute; add teriyaki, sriracha. Stir in noodles, coating evenly; cook tender but not mushy; just a couple minutes; add honey/peanut butter. Remove from heat; garnish with cilantro and peanuts; s&p to taste.
