Sweet Peppers Turkey Melt
Servings: 9 Stuffed Peppers
Roughly six cups of leftovers from a Thanksgiving meal or any other, topped with a melting cheese creates a scrumptious dinner repeat in a tasty bundle!
Slice tops off peppers & reserve; seed and core; brush skins with olive oil to help brown; set aside. Heat oven to 350°. Mix remaining ingredients except cheese. Mix should hold together; be a little moist. Stuff into peppers; top with cheese. Place on an 11-inch ovenproof grill pan coated with Teflon™ nonstick. Bake 20 minutes. Place under broiler for 3-4 minutes to brown cheese slightly if desired.
