Lunchbox Applesauce Recipe

Servings: 5-6 cups

Healthy and tastier than out-of-the-jar. Delicious on sandwiches or with cottage cheese; even great for dessert. A mix of apples such as Gala, Golden Delicious, and Granny Smith creates a more complex taste.



6 medium apples, unpeeled, cored

2 teaspoons lemon juice

½ cup apple cider

¼ cup maple syrup

1 tablespoon almond extract

1 tablespoon mix: cinnamon, allspice, nutmeg, ginger

Cut apples into a ½-inch dice; coat with lemon juice. Bring cider to a boil in a saucepan with Teflon ™ nonstick coating, reducing by half. Add apples and cook uncovered, stirring often 12-15 minutes. Stir in the maple syrup, almond extract, and spices. Cook on low another 5 minutes until apples are tender but holding their shape; transfer to a bowl and mash with a wire whisk. Serve warm or cold or store.
