Steam Poached Eggs Recipe
Servings: 3 (2 eggs each)
Dual egg poacher/skillet pan steams eggs instead of cooking in water for less watery, evenly-poached results, and sautés bacon and veggies including market-available spiraled sweet potato thins to form a nest for the eggs.
Cook bacon in Teflon™ coated nonstick skillet bottom of pan. Drain bacon & chop; leave 2 teaspoons rendering to sauté onions, peppers, potatoes lightly with herbs; transfer to a bowl. Wipe pan clean with paper towel; add water just below rivets; boil & turn down to medium. Add poacher insert. Butter cups lightly; crack egg into each; cover & steam a minute; shake water off cover; return to pan. Steam 4 minutes more or until egg whites start to turn opaque, longer for less runny yolks. Invert cups placing 2 eggs onto each plate of bacon/potato nests. Serve.
