Chicken Noodle Soup With Veggie Charms Recipe

Get the Dutch Oven!

Use 1-inch cookie cutters for a fun kid activity that helps them eat their veggies, too! You will need about 2 cups of cut veggies; use veggies scraps for another recipe, such as in a stew, a salad, or another soup.

 

Ingredients:

 

1 large zucchini, ends trimmed

4 medium radishes

2 thick carrots, peeled

1 yellow bell pepper, seeds & core removed

4-5 cups chicken stock or broth

Salt and white pepper to taste

4-6 ounces dry angel hair pasta, cooked

1 cup cooked shredded chicken

Directions

Cut washed zucchini, radishes, carrots lengthwise into ¼-inch slices. (Use only green outer skins of zucchini). Cut pepper into 4 quarters. Press cutters into veggies to stamp out shapes. Bring stock to a boil in a large pot with Teflon™ nonstick coating. Turn to low boil; add the veggies cooking just 2 minutes; season broth to taste with salt & white pepper. Skim off veggies and set aside. Divide the chicken among the bowls followed by the pasta; ladle broth and scatter veggie charms overtop before serving.
