Crispy Mediterranean Sweet Potato Fries Recipe

2 large sweet potatoes

1½ tablespoons olive oil

1 tablespoon mix: dried thyme, oregano, rosemary

Pinch crushed red pepper flakes

Preheat the oven to 350°. Cut potatoes into ¼-inch matchsticks. Toss with the olive oil and then spices, covering potatoes evenly. Transfer potatoes to the crisper with Teflon™ nonstick coating. Bake 55 minutes or less for chewier finish. Place basket on a clean surface and transfer fries to a serving plate. Clean basket under cool running water and sponge down with soap if needed.
