Strawberry Nut Loaf
Servings: 1 Loaf
Spread with mix of 3 ounces cream cheese processed with ¼ cup of strawberries.
Preheat oven to 350°. Toss berries with a pinch of the flour; they won't sink. Beat butter fluffy with sugar. Beat eggs in one at a time; add vanilla, lemon zest. In separate bowl, mix flour with baking soda, baking powder, salt; make a well; turn in butter mixture. Fold in berries, nuts. Pour into a 9x5-inch loaf pan coated with Teflon™ nonstick. Bake 55 minutes or when tester is clean. Cool on wire rack.
