PB & J Rise Up Risotto

Our risotto is a comfy hot cereal. Its hallmark creaminess is a stirring experience, but the stovetop on a cold morning, is a cozy place to be. Make ahead: leave off last ½ cup addition; store & reheat with last measure when ready to serve.




1½ cups water

1½ cups Arborio or other short-grain rice

½ teaspoon salt

4 cups or more unsweetened almond milk

2 tablespoons honey

⅓ cup creamy peanut butter

½ cup preserves of choice

Zest of 1 orange

½ cup each: fresh cherries, sliced toasted almonds

Orange slices for garnish

Cinnamon sprinkle

In a medium saucepan, coated with Teflon™ nonstick, bring water to a boil; stir in rice, salt; cook on medium uncovered until water is absorbed. Meanwhile, warm milk in microwave; add ½-cup, stirring constantly to absorb, repeating until ½ cup is left. Stir in honey; add remaining ½ cup milk. Off heat, stir in pb&j. Serve in pre-heated bowls with cherries, almonds; cinnamon. Garnish with orange twist.
