S'Mores Pumpkin Pudding Recipe

Campfire s'mores goes trick-or-treating as a creamy stovetop dessert.




2 envelopes (2 tablespoons) unflavored gelatin

½ cup water

1 (15-ounce can) pumpkin puree

2 cups evaporated milk

½ cup sugar

1 tablespoon vanilla extract

1 ½ tablespoons pumpkin pie spice

1 cup toasted mini-marshmellows, plus a few for garnish

½ cup graham cracker crumbs

Whisk gelatin in water to congeal. Over medium heat, add pumpkin puree to a saucepan with Teflon™ nonstick coating and blend in the milk, sugar, vanilla, pumpkin spice. Bring to a boil, stirring 2 minutes; remove from heat; whisk in gelatin then marshmallows; transfer to serving dishes. Cool 20 minutes; cover with plastic wrap. Chill 2 hours in fridge to set. Top with a layer of cracker crumbs and chocolate sauce; add whipped cream and sprinkles. Garnish with marshmallows.
