Caramel Apple and Banana Breakfast Topper Recipe
Serve over hot cereal, toast, eggs, pancakes and more. The fruit naturally sweetens as it caramelizes. Can be made ahead and reheated on stovetop.
Over medium-low heat in a medium skillet with Teflon™ nonstick coating, simmer the apples, juice, & lemon zest 4 minutes to soften; liquid will evaporate bringing out the fruit's natural sugars; stir in butter and cinnamon; gently fold in bananas and cook a few minutes to bronze them. Top with a sprig of mint.
