Eggverything for Mom Popovers Recipe

Servings: 12  Popovers

Crusty outside & hollow inside, anyone can make these eggy biscuits.  Serve Mom breakfast in bed on her special day. Don’t open oven til done or they will poop out rather pop over!

 

Ingredients

5 tablespoons butter (3 chilled, 2 melted)

5 eggs

1½ cups almond milk (not beverage)

1½ cups all-purpose flour

¼ teaspoon salt

1½ teaspoons dried thyme

Directions

Preheat oven to 375°. Divide cold butter into bottom of 12 muffin cups; place in oven 2 minutes to preheat pan. Beat eggs until foamy, beat in milk and melted butter. Add the flour, salt, and thyme, beating about 3 minutes. Remove pan from the oven and fill each cup almost ¾ with batter. Bake 35 minutes or until golden brown.
