Get Sappy Goat Cheese Salad Recipe



1/3 cup breadcrumbs

¼ cup almonds, crushed

1 (8-ounce) goat cheese log, cut into ½ -inch slices

1 egg, beaten

1/2 cup avocado oil, plus 1 tablespoon

6 cups salad mix of your choice

¼ cup pure maple syrup

2 teaspoons pure vanilla extract

1 grapefruit sectioned, juice reserved

Mix breadcrumbs and almonds. Dip goat cheese slices in egg and then nut/breadcrumbs mix. Add a tablespoon of the oil to a 10-inch KitchenAid skillet with Teflon™ nonstick coating. Over medium heat, brown rounds; drain on paper towel and let cool to room temp. Whisk the syrup with the vanilla, grapefruit juice, and remaining olive oil, or mix in a shaker. Pour over prepared mixed salad plates. Add a few grapefruit sections to each dish followed by the cheese rounds. Serve right away, or prepare in advance and refrigerate, holding off the dressing until serving time.
