Kuri Caramel Squash Recipe

Servings: 2 to 4

Kuri is a red-orange, pumpkin-shaped squash with a chestnut taste and a mellow texture. The orange is a sign of preventative antioxidant benefits.



1 medium red kuri squash (about 3 pounds)

2 tablespoons butter, softened

2 tablespoons honey

Cinnamon powder

½ cup water

Preheat the oven to 350°. Cut the squash in half lengthwise. Using a spoon, scrape out the seeds and any stringy, fleshy meat.

Brush the butter onto the inside of each piece and then brush on the honey. Sprinkle with the cinnamon. Place on a baking pan with Teflon™ nonstick coatings. Bake for 30 to 40 minutes or until the outside of the squash yields with the press of your finger. Check midway when baking and add more water if the squash is browning too much. Remove from the oven and scrape out the pulp and serve, or cut the squash and serve in the skin on individual plates.
