The Cod Father with Tomato Chive Sauce Recipe
This cod is simply done in a skillet; just add a sauce. Here we – well – codifry it for you!
In a small saucepan with Teflon® nonstick coatings, heat the shallots with the wine and vinegar over medium heat, reducing to about 2 tablespoons. Add the yogurt and return to a simmer for about 2 minutes. Remove from the heat and begin whisking in the butter until incorporated, and then transfer to a bowl. Add the tomato, chives, lemon juice, and a seasoning of salt and pepper. Sprinkle S & P over the cod. In a braising pan with Teflon® nonstick coating, heat the oil and sauté the cod filets over medium heat for about 5 minutes a side until golden. Serve right away with a topping of the chive sauce.
