Warm Potato Salami Salad

Servings: 4

The rich roasted flavor of the potatoes with the salty salami balanced by the crisp celery and tang of the dressing makes this a terrific lunch for a cold-weather day. The salami injects all the salt you need in this dish. 



1 pound red potatoes

3 tablespoons olive oil

2 ounces thinly sliced dried sweet salami

4 stalks celery

¼ cup fresh lemon juice

Fresh chopped parsley

Preheat the oven to 400°. Cut the potatoes into sections and mix with 1 tablespoon of the olive oil. Place the potatoes onto a baking sheet with Teflon™ nonstick. Bake -- turning often -- for about 20 minutes or until soft when pierced with a fork. Transfer to a bowl and mix in the salami, celery, lemon juice and remaining olive oil. Toss carefully and sprinkle with parsley.
