Mighty Joe Banana Split Breakfast recipe

King Kong would say this is a healthy way to go for a light, nutritional dessert. But thanks to the dairy protein, we think it is just right for an off-to-school breakfast.  



4 medium bananas

2 cups Ricotta cheese or thick, creamy plain yogurt

½ cup blueberry jam

¼ cup or more roasted walnuts

Peel the bananas. Place in a narrow corn-shaped dish or an ice cream sundae plate. Place a banana in each and cut it in half lengthwise. Spoon the Ricotta and jam in the center of the bananas. In a small skillet coated with Chemours™ Teflon™ nonstick, roast the walnuts over medium heat, shaking the pan often and cooking until slightly browned. Sprinkle them over each banana and serve.
