Herbed Onion Rings recipe
No deep frying of these rings to make them shine on your table! The flavor is delicious as is, but the herbs add emerald sparkle and taste. Thanks to the nonstick there are far fewer calories in these rings than traditional deep-fried onion rings.
Preheat the oven to 400°. Slice the onions into ½-inch-thick pieces; separate into rings and soak in a bowl of cold water. Beat the eggs in a shallow dish. Combine the breadcrumbs in a third dish with the paprika, parsley and herb mix. Dip the rings lightly into the flour and then egg and breadcrumbs. Place the rings on a flat pizza pan or cookie sheet with Teflon™ nonstick coating and drizzle the rings with olive oil. Bake 15 minutes or until golden.
