Surprise-in-the-Box Fall Pizza recipe

Servings: 6 pieces

Because this is good cold, wrap the slices with foil and place in the lunchbox with an ice pack.



1 prepared, uncooked pizza dough for a 10-inch pie
1 tablespoon olive oil
1-1/2 cups baby arugula leaves
1/4 cup vinaigrette salad dressing
2 cups thinly sliced red (tart or sweet) apples
1/2 cup coarsely chopped toasted walnuts
1/2 to 3/4 cup crumbled goat cheese

Preheat the oven to 450°. Brush olive oil on the top side of the pizza dough. Place on a baking pan with Teflon™ nonstick coating. Toss the arugula with the dressing. Place the greens around the dough and then nestle in the apples and walnuts between the leaves; top with the cheese. Bake for 8 to 10 minutes until the cheese melts and the dough begins to brown. Let rest 3 minutes before cutting into wedges with kitchen scissors.
