Here is a nutrient-dense salad combo. You can stop here, or go on and make it a main course for dinner with the addition of a protein. For example, we’re adding steak. See Tenderloin Steak recipe.

The Dressing:
1/2 cup walnut oil
1/4 cup olive oil
1/4 cup balsamic vinegar or fig balsamic
1/4 cup lemon juice
3 large garlic cloves, minced
2 tablespoons minced flat-leaf parsley
1 teaspoon red pepper flakes, crushed
Salt and pepper to taste

6 cups baby Romaine lettuce leaves or mixed lettuce
1/2 cup farm market raspberries
1/4 yellow or red onion, thinly sliced

Whisk the dressing ingredients for at least 30 seconds. Or, if using a jar, make sure it is a 2-cupper and shake it vigorously to mix and then again when serving. Taste and add more S&P, if desired.  Compose the salad and toss with the dressing; follow with grilled sliced steak (see Tenderloin Steak recipe).
