The Darkest, Healthiest-Ever Chocolate Pudding recipe

Get the Saucepan!

Healthiest because of the secret ingredient: the avocado, which makes the pudding creamy without the cream! And sweet without the sugar! Plus, there is no corn starch or other powdery stabilizer or boosters. Yet it may be the richest chocolate you have ever had. You have to garnish with a thin slice of avocado or they won’t believe you!



1/4 cup honey
3 ripe medium-large avocados, plus a few slices for garnish
6 tablespoons unsweetened cocoa or carob powder
1-1/2 tablespoons vanilla extract
Finely chopped walnuts
Whipped cream

Melt the honey in a small pan with Teflon™ nonstick coating. Meanwhile, remove the stones from the avocadoes and slice the fruit into eighths for processing. Place into the food processor with the honey, cocoa, and vanilla. Process a few times to create a smooth pudding consistency — still thick but silky. Fold in the walnuts and plate into small dessert bowls, dividing evenly. Refrigerate or serve immediately garnished with whipped cream and topped with an avocado slice.
