Winter Peaches with Goat Cheese and Toasted Cashew Nuts
These peaches brighten a January table, and cashews are a favorite nut in Chinese cuisine. Since peaches are now available all year long, ask the produce manager to set aside a choice selection of 6 large peaches. The peaches offer a nice, sweet, fresh foil to the complex ingredients in the other Chinese buffet dishes.
Toast the cashews in a small skillet coated with Teflon® non-stick. Place the skillet over medium heat and shake the pan until the nuts turn a deeper golden brown. Set aside.
Halve and pit the peaches.
Stir together the goat cheese with the heavy cream. Mixture should be thick; add more cheese if not.
Fill each peach half with the cheese mixture and sprinkle with the toasted cashews and cinnamon powder. Serve garnished with a mint leaf.
