Red Pepper Sesame Noodles

Servings: 6 

To toast the sesame seeds, heat them over medium in a small skillet coated with Teflon™ non-stick, shaking the pan to keep them from burning. The seeds are ready when they start turning a golden color.



1 pound whole wheat spaghetti or udon noodles
1/2 cup soy sauce (reduced sodium)
2 tablespoons sesame oil
2 tablespoons walnut oil
1 tablespoon rice wine vinegar
1 tablespoon fresh lime juice
2 teaspoons crushed red pepper
1 shallot, minced
4 green onions, trimmed and finely chopped
1/4 cup fresh cilantro
4 cups snow peas, trimmed and sliced diagonally
1 medium red bell pepper, thinly sliced
1/2 cup toasted sesame seeds

Cook the spaghetti according to package directions; drain and rinse under cold water.

Meanwhile, whisk together the soy sauce, sesame oil, walnut oil, rice wine vinegar, lime juice, red pepper, shallot, scallions, and cilantro. Add the noodles, snow peas, and bell pepper and toss to coat. Serve with the sesame seeds sprinkled over the top.
