Smoked Salmon and Goat Cheese Stuffed Latkes
Don’t make a meal of these potato pancakes. That’s just not the healthy Jewish way anymore! And since these are stuffed, you’re already getting two latkes in one! Cut in half and they can be an appetizer serving for 12.
Combine the potato and the onion and squeeze the moisture through a sieve. Add the breadcrumbs, dill, a seasoning of salt and pepper, and the eggs. Shape the mixture into 12 (1/4-inch-thick patties.
In a large skillet coated with Teflon™ non-stick, heat 2 tablespoons of olive oil and add 6 patties. Flatten slightly with a rubber spatula and then sprinkle with goat cheese. Add salmon to cover the cheese and then cover with an additional patty. Coax the tops and bottoms of the pancake together. Cook each side for about 5 minutes. Garnish with lemon slices and dill branches.
