Maple Essence Blueberry-Almond Corn Bread

Servings: 1 loaf, 8 to 10 slices

This is a great bread to enjoy making with kids, or when you’re in a hurry and need something quick but satisfying to serve. Dried blueberries also come unsweetened, and that’s your choice as part of your Everyday Healthy menu.



1-1/2 cups all-purpose flour
1/2 cup almond meal
1 cup yellow cornmeal
2 teaspoons baking soda
1/2 teaspoon salt
2 cups plain fat-free yogurt
1/2 cup canola oil
1/2 cup maple syrup
1/2 cup honey
2 teaspoons almond extract
1 cup dried unsweetened blueberries
1/2 cup raw sunflower seeds

Preheat the oven to 350 degrees.

Combine the flour with the almond meal, corn meal, baking soda, and salt. In a smaller bowl, stir until blended, the yogurt, canola oil, maple syrup, honey and almond extract. Add the mixture to the dry ingredients and stir until moist. Fold in the blueberries and stir in the sunflower seeds.

Spoon the batter into a loaf pan coated with Teflon™ non-stick and bake 35 minutes or until a tester inserted in the center of the bread comes out clean.
