Warm Shiitake Mushroom Salad
This shiitake mushroom salad is a nice contrast and great palate cleanser.
Shake the dressing ingredients together and set aside.
In a small skillet coated with Teflon® non-stick, heat the walnut oil over medium-low heat. When hot, add the mushrooms and saute, stirring frequently, for about 5 minutes until mushrooms start to brown. Remove from the heat but keep warm.
Add the lettuce to a bowl and toss with the dressing. When ready to serve, fold in the mushrooms and toss again gently.
