Warm Shiitake Mushroom Salad

Servings: 4

This shiitake mushroom salad is a nice contrast and great palate cleanser.



1/2 cup walnut oil
1 lemon, preferably a Meyer lemon, but any lemon will do
1/4 cup balsamic vinegar

2 tablespoons olive oil
2 pints shiitake mushrooms, stems removed and heads sliced thinly
6 cups lettuce, torn

Shake the dressing ingredients together and set aside.

In a small skillet coated with Teflon™ non-stick, heat the walnut oil over medium-low heat. When hot, add the mushrooms and saute, stirring frequently, for about 5 minutes until mushrooms start to brown. Remove from the heat but keep warm.

Add the lettuce to a bowl and toss with the dressing. When ready to serve, fold in the mushrooms and toss again gently.
